Principes de la microbiologie alimentaire pour la transformation et la détérioration des aliments. Introduction aux techniques et aux tests de microbiologie alimentaire, base moléculaire pour la détection des organismes alimentaires spécifiques et des agents pathogènes, la durée de conservation et les principes des différentes méthodes de stérilisation. Application de cultures microbiennes pour le développement de la production alimentaire (par exemple la production de fromage, de saucisse, de pain, de yaourt).
